Cascina Zerbetta - Shan Pan 2024

(Piemonte, Italy) 

A unique sparkling wine made from Sauvignon Blanc in Italy's Northwest. This wine is refermented using no sugar or yeast additions, but rather using grape juice extracted from late harvest grapes of the same vineyard. It's funky, toasty, aromatic, and the perfect balance of fruit and yeasty complexity. Its soft bubbles make it a pleasure to drink. 

Made by Paolo Malfatti, a Piemonte native who planted his vines on previously unused land in Monferrato in the late 90's. In this picturesque corner of Italy's Northwest, vines grow alongside organic hazelnuts and wild plants.
