(Prosecco, Italy)

 70% Glera, 10% Verdiso, 10% Perera, and 10% Bianchetta.

This wine showcases the history of the region, using a larger percentage of the traditional indigenous grapes, giving it a unique character and taste. The wine spends 4-5 days on the skins, and the use of heritage varieties gives it a slightly more savoury edge. Gigi was taught that 'good prosecco should taste like bitter almonds', and this wine has a very moreish almond/brioche quality, as well as notes of citrus and apricot, all balanced with lively bubbles.

The Morandin estate is run by Gigi and Lilia Giacometti, a couple in their 70s. They make all the wine themselves, and it is grown on the property where they've lived for over 30 years. Lilia's great grandmother also made wine in the same style, by hand and with natural fermentation and with the same vines, as the site has been continuously planted for over a century.
