It is unoaked, as Elodie's family never converted over to barrel aging when it became popular in the region, so has a bright freshness that plays beautifully alongside the intense flavours, rich creaminess, and ends at a generous finish with great mineral depth.

Made by Elodie Jaume, a young winemaker who for the past 8 years has made all the wines for her family's estate Domaine des Chanssaud, though as of 2023 has converted the entirety of the estate to 'Domaine Elodie Jaume' to solidify her own ideas and her own style.
