Sauvignon O is a vibrant, textured expression of Loire Sauvignon Blanc, absolutely brimming with energy. Naturally fermented and spending 11 months in old oak, this has a more oxidative style, with an incredible saline finish with notes of hazelnut. Audrey picks later than most of her peers in the Loire valley, so her wines tend to have a richness and full body that makes them deeply moreish and compelling.
Audrey as a winemaker is ‘living her third life’ after a storied career that has spanned from working as a wine merchant in Paris to growing vines in the Alsace. Returning to the Loire to start again, she began making wines in an abandoned rock quarry, producing only 5000 bottles a year and using organically-farmed negocé fruit that she buys from trusted farmers and friends. Her winemaking philosophy prioritises long maturation, and her wines are vinified without any chemical or mechanical intervention.
